Pork Binagoongan is a pork stewed dish sautéed in shrimp paste (bagoong alamang). A dish perfectly served with fried eggplant, unripe mango and steamed rice.

Ingredients

Instructions
  1. Cut 1 kilo of port into cubes and boil until tender. Set aside.
  2. Sauté garlic, onion, and tomato in a separate pan.
  3. Add the pork and shrimp paste.
  4. Stir fry for few minutes until pork starts to render fat and turn to brown.
  5. Add vinegar and bird's eye pepper (siling labuyo). Let it simmer for about 5 minutes.
  6. Season with sugar to taste and put in the sliced eggplant.
  7. Continue cooking in low fire until the eggplant is done.
  8. Serve while hot!
