Beef Kare Kare

Kare-kare is a dish cooked with peanut sauce, vegetables, stewed oxtail. Meat can be pork, goat meat but usually Filipinos use beef as main ingredient. This dish is usually eaten with shrimp paste (bagoong alamang). Some also would like to add chili.

This dish is popular in Pampanga province.

Instructions
  1. Add water and beef shank then boil in a large pot for 3 hours or until tender. Best if you can use pressure cooker.
  2. Add peanut butter and the coloring liquid from the annatto seed mixed with water and simmer for 5 to 7 minutes one our meat is tender.
  3. Saute the garlic then add the eggplant, and string beans and cook for 3 minutes on separate pan.
  4. Mixed the cooked vegetables to our large pot.
  5. Add the Pechay and simmer for 2 minutes
  6. Add salt and pepper to taste
  7. Serve hot with shrimp paste
