Instructions
  1. Preheat oven to 350° F. Line the baking sheets with parchment paper or non-stick baking mats; set aside.
  2. Using a fine-mesh sieve, sift both flours, salt, baking powder, and baking soda into a large bowl. Using a large whisk, whisk to combine; set aside.
  3. Using a stand mixer fitted with the paddle attachment, cream butter and both sugars together on medium-high speed until very light, about 5 to 7 minutes.
  4. Reduce speed to medium, add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla.
  6. Reduce speed to low, gradually add the flour mixture and mix until just combined.
  7. Add the chocolate; mix until well combined.
  8. Using a 4-ounce scoop for larger cookies or a 1-ounce scoop for smaller cookies, scoop dough onto prepared baking sheets, about 2 inches apart.
  9. Bake for 18-20 minutes for larger cookies and about 15 minutes for smaller cookies or until lightly browned, but still soft. Do not over-bake. Cool slightly on baking sheet before transferring to a wire rack to cool completely.
